I posted these yummy treats on facebook and instagram the other day, and there were lots of recipe requests. Well, ask and ye shall receive!
These are my mom’s yummy concoction – a combination of a cupcake recipe she found online and a favorite frosting recipe (guys – this frosting is legit). My mom has become something of a cupcake queen in the past couple years, and these orange creamsicle cupcakes are her latest favorite. And they are delicious!
Orange Creamsicle Cupcake
cupcake recipe adapted from Soda Pop Ave
Cupcake Ingredients
- 1 pkg white cake mix
- 1 pkg cheesecake pudding mix
- 1 pkg orange jello mix
- 1 1⁄4 cups orange juice
- 4 eggs
- 1/3 cup vegetable oil
- 1 tsp vanilla
- 1 (7 oz) marshmallow creme (for cream filling)
- 1⁄2 cup unsalted butter, slightly softened (for cream filling)
Frosting Ingredients
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp orange extract
- 2 cups heavy cream
- Preheat oven to 350 degrees F.
- Mix all cupcake ingredients together except for marshmallow creme and butter.
- Prepare cupcake pans with liners or by greasing. Fill cupcake tins 2/3 full.
- Bake for 18-20 minutes or until toothpick inserted into the center comes out clean.
- While cupcakes cool, whip together butter and marshmallow creme.
- Cut small cone out of center of cupcakes. Pipe filling into the hole and replace cupcake.
- For frosting, mix cream cheese, sugar, and orange extract in large mixing bowl or with stand mixer. Mix on medium speed until smooth. With mixer running, slowly pour in heavy cream. Continue whipping until cream can hold a stiff peak.
- Pipe frosting onto each cupcake.
These look so yummy! I was working a wedding on Saturday night that was all ice cream themed, and they had orange creamsicle cupcakes that were shaped like ice cream bars. They even had popsicle sticks in one end! So cute.
