Low-Calorie Minted Mango Refresher

Here in Vegas we already are in full-on summer mode, which means it’s barbecue season. And in my mind, no barbecue is really complete without some kind of fancy drink. (Little umbrellas? Yes, please!)

But here’s the rub – it’s also swim suit season, and those fancy drinks are often loaded up with sugar and calories. No bueno.

So, how about a delicious and beautiful drink that also happens to be low-calorie? Well, I’ve got one, friends! My Minted Mango Refresher feels special and summery without breaking the calorie bank. The secret weapon is 7 Up Ten, which has all the flavor and taste you want for only ten little calories per serving. Good stuff.

Here’s how to dress it up for your next barbecue:

Ingredients:
  • 7up Ten, chilled
  • 1 cup fresh, ripe mangoes, diced (thawed frozen mangoes should work well too)
  • 2 Tb fresh mint leaves
  • 1/4 cup water
  • Ice cubes
Process 1 cup of diced mango with 1/4 cup of water in a blender.
Roughly chop up mint leaves, and use side of knife to crush mint against the cutting board until it becomes fragrant. (If you have a mortar and pestle that would work even better.)
Stir crushed mint leaves into mango puree.
Let puree chill in the fridge for a while to let those flavors mix together. Then push the puree through a strainer to take out any stringy pulp bits and the mint leaves.
Next, spoon a couple of tablespoons of the puree into the bottom of a (chilled, if you’re fancy) glass. Fill the glass with chilled 7 Up Ten.
Throw in a couple of ice cubes, stir it up, and top off a few mint leaves and a pretty straw.
And, enjoy because this pretty drink is seriously yummy! And only about 35 calories per serving! Perfect for barbecue and swim suit season.
