I am really excited to share these marshmallow ice cream cones with you guys today. I’ve been teasing this one on instagram for a while now because I am borderline obsessed. They are probably my favorite project from the ice cream party we had last week.
When I was planning the party, I came across these adorable mallow cones from Sprinkle Bakes, and I had to try making my own. I love the Sprinkle Bakes version, but I decided to try a couple different varieties in traditional ice cream flavors: mint chocolate chip and orange creamsicle.
They turned out so, so cute and are really tasty too. I am not a big fan of store-bought marshmallows, but homemade marshmallows in an ice cream cone? Whole different thing – Oh. My. Tasty.
If you have made marshmallows before, these will be pretty simple for you, and if you haven’t made marshmallows before, don’t be intimidated! They are not as difficult as they may seem. Yes, you will need a candy thermometer, but that doesn’t have to be so scary. If you have everything ready to go before you start and follow the directions carefully, you should have no problem. Promise.
It is important to have everything all ready to go before you start making the mallow because you will need to move quickly to get it piped into the cones before it sets up. Start off by getting your cones all ready to go. Since I didn’t want giant marshmallow cones, I decided to cut the cones down to a smaller size. I used a serrated knife to saw off the top inch and a half of each cone.
To make the cones extra fancy, I brushed the tops with a little corn syrup and then rolled them in sprinkles.
I used a cardboard box with holes cut in the top to hold my cones upright, although this cone holder looks like it would work great. When your cones are ready, collect all your ingredients and tools together. Prepare a large piping bag with an extra large round tip.
Got it? Ready? Good! Let’s get to the recipes and whipping up that mallow!
Mint Chocolate Chip Marshmallow Ice Cream Cones
adapted from Sprinkle Bakes
Ingredients
- sugar cones with tops cut off (I only made about 12 of each flavor, but there was enough mallow for twice that) and decorated with sprinkles (I used chocolate jimmies – see instructions for adding sprinkles to cones above)
- 5 tsps unflavored gelatin
- 1/2 cup cold water
- 3/4 cup sugar
- 1/2 cup clear corn syrup, divided
- 1/4 cup water
- pinch of salt
- 1/4 tsp mint extract
- green food coloring (I used a few drops of Americolor Avocado and one drop of Americolor Turquoise)
- 1 cup mini chocolate chips (regular size chocolate chips won’t work)
- Mix gelatin and cold water in small bowl. Let sit for five minutes until water is absorbed.
- Stir together 3/4 cup sugar, 1/4 cup clear corn syrup, 1/4 cup water, and pinch of salt in small saucepan over high heat with candy thermometer attached.
- Meanwhile, melt gelatin (30 seconds in the microwave will do it) and mix with remaining 1/4 cup corn syrup in box of stand mixer with the whisk attachment. Keep the gelatin and corn syrup stirring on low until the sugar syrup is ready.
- When the sugar syrup reaches 240 degrees, slowly add it to the gelatin with the mixer running. Increase the mixer speed to medium. Mix for five minutes. Increase speed to medium-high. Mix for five more minutes. Increase speed to highest setting. Mix for two minutes, add mint extract, and mix for two more minutes. By now, your mallow will be fluffy, opaque, and tripled in size.
- Add food coloring and mix until incorporated.
- Add in mini chocolate chips, and stir until distributed throughout.
- Moving QUICKLY, transfer mixture to piping bag and fill cones using a swirling motion.
- When the marshmallow has had some time to set up and dry, dust the tops with a mixture of about 1/2 cup powdered sugar and 3 Tbsps corn starch. Tap or blow off the excess. This will keep your cute cones from sticking to each other or favor bags.
Orange Creamsicle Marshmallow Ice Cream Cones

Ingredients
- sugar cones with tops cut off (I only made about 12 of each flavor, but there was enough mallow for twice that) and decorated with sprinkles (I used pink sugar – see instructions above)
- 5 tsps unflavored gelatin
- 1/2 cup cold water
- 3/4 cup sugar
- 1/2 cup clear corn syrup, divided
- 1/4 cup water
- pinch of salt
- 1/4 tsp orange extract
- 1/4 tsp vanilla extract
- orange food coloring
- Mix gelatin and cold water in small bowl. Let sit for five minutes until water is absorbed.
- Stir together 3/4 cup sugar, 1/4 cup clear corn syrup, 1/4 cup water, and pinch of salt in small saucepan over high heat with candy thermometer attached.
- Meanwhile, melt gelatin (30 seconds in the microwave will do it) and mix with remaining 1/4 cup corn syrup in box of stand mixer with the whisk attachment. Keep the gelatin and corn syrup stirring on low until the sugar syrup is ready.

- To create a swirled look, moving QUICKLY, scoop about two cups of the white marshmallow into one half of the piping bag.
- Add orange food coloring to remaining marshmallow and mix until incorporated.
- Moving QUICKLY, transfer remaining mixture to the other half of the piping bag and fill cones using a swirling motion.
- When the marshmallow has had some time to set up and dry, dust the tops with a mixture of about 1/2 cup powdered sugar and 3 Tbsps corn starch. Tap or blow off the excess. This will keep your cute cones from sticking to each other or favor bags.
And that’s it! It may seem a bit complicated, but I promise I am not a master candy maker, and if I managed to pull these off, I know you can too!
